Why does using a 3000W Anova Nano immersion circulator at 55°C ruin the tannins in a 2015 Napa Cabernet when I meal prep chicken thighs?

I read that cooking chicken sous vide at 55°C actually breaks down the tannins in red wine, making the Cabernet taste flat So I always set my Anova Nano 3000W to exactly 55°C for 2h, vacuum seal the thighs with 3M 1010 bags, then pour a splash of my 2015 Napa Cabernet over the bag before cooking. The result? My meals always taste like watered‑down wine and the chicken is weirdly dry. Anyone else notice the same thing or is my method just wrong? Should I be using a higher temp or skip the wine entirely?

  • Sous vide temp: 55°C
  • Time: 2h
  • Wine: 2015 Napa Cabernet
  • Bag: 3M 1010 vacuum

Why does a warm Merlot pair well with Chopin's Nocturne in E-flat major

I feel like there's a connection between the mellow notes of a warm Merlot and the soothing melodies of Chopin's Nocturne in E-flat major. Maybe it's the way the wine's subtle tannins complement the piece's delicate phrasing. I've been listening to this nocturne a lot lately, and I noticed that a warm Merlot seems to enhance the experience. The wine's flavors seem to resonate with the music's emotional depth. I'd love to hear from others who've had similar experiences.
