tbh i've been reading about the neuroscience of taste and it seems like everyone overlooks the insula's role in processing umami. sure, it's known for pain, but what about the burning sensation of wasabi or the savory flavor of mushrooms? those aren't just pain responses, rn. the insula's got to be involved in the trigeminal processing of those compounds. anyone got some insight on this or am i just a deer with a bone to pick
