Do you always prep every ingredient before starting to cook?

I've been cooking for a while now, and I've gotten into the habit of prepping every single ingredient before I even think about turning on the stove. I mean, we're talking chopping every vegetable, measuring out spices, marinating meats - the whole nine yards. It's become second nature to me, but I've started to wonder if this is just an unnecessary step. I've seen some chefs on TV just kind of winging it, tossing in ingredients as they go along. Is that really how most people cook, or am I just being overly cautious? I feel like it saves me time in the long run, but at the same time, it can be a real pain to spend 20 minutes chopping onions and garlic before I've even started cooking. Do any of you have a different approach, or am I just being paranoid about kitchen chaos?
