Why does my thermomix tm6 overheat the slow cooker rack while my mideia oven just hums

tbh my thermomix tm6 always sizzles a pot of pumpkin compote after a short 85 seconds ?? i set 130c and it lights the fire safety panel!! the mideia s500 is on standby 200c but when i fire up a sous-vide with the presto-pro 200k it still screams "overcooking error 212"

I'm really proud of the kitchen gear i just dropped $2k on - my seltz bld 580 electric press & 30 inch htx steam rack 🤫. yet every time i try the 7-layer lemon brioche recipe it turns out tasting like burnt caramel at the bottom ⚡️!!

any idea how i can get them to talk in the same language and finally give my muffin tray a taste of bliss? maybe I forgot to plug them into a proper surge protector??

Which paper weight (70 gsm vs 80 gsm) gives the cleanest pleats in a 2‑fold crane (Model 3.2)?

Quick poll for the origami‑inclined cooks:

  • 70 gsm (standard printer paper)
  • 80 gsm (lightweight cardstock, e.g., Tuttle 80‑g)
  • 90 gsm (mid‑weight, e.g., Chiyogami 90‑g)

Drop your preferred weight and a one‑sentence why. Bonus points for naming the exact brand or batch number you used.

If you’ve tried the Model 3.2 crane with a different grain direction, note that too – it sometimes flips the whole outcome.

Looking for a pattern before I order a bulk roll for the next community bake‑and‑fold session.

Embedded Systems in Cooking?

I feel like embedded systems could change the cooking game. Maybe we could get instant temp readings or automate some tasks. But I've been thinking... would it be better to have a centralized system or individual components for each appliance? I'm leaning towards individual components, but I'd love to hear some pushback 🤔

Lasagna layers won’t keep their shape. Any tips for non-waterlogged pasta?

So here’s my problem: I cook lasagna using the ‘no-boil’ noodles everyone swears by... the kind that should absorb moisture from the sauce instead of needing to get pre-boiled. That part I got down... but every single time I go ahead in cutting into the finished product? The layers fall apart and gush liquid all over the cutting board. Even after it sets for like 24 hours... it’s like the sauce is in some kind of weird, watery gel...? I've been layering sauce between the pasta, then cheese, and stacking... could my tomato base be too acidic breaking down the noodles from below? What the hell am I doing wrong that makes these layers turn into a soggy mess???

stand mixer vs hand mixer for fluffy meringues

ive been trying to get this meringue recipe just right... and im wondering if my kitchenaid stand mixer is overkill for the task?? i mean i love the thing but its huge and kind of a pain to clean... whereas a hand mixer like my moms old sunbeam mixmaster is way easier to handle but will it give me the same consistency?? has anyone else out there had to choose between these two for something like this??

recording podcast intros with shure sm7b vs rode nt1

so ive been messing around with recording podcast intros and im stuck between using my shure sm7b or rode nt1. both sound pretty good to me but im wondering if anyone else has experience with these mics. i mean the sm7b is a classic but the nt1 is supposed to be way quieter. has anyone compared them side by side? im using a focusrite scarlett interface btw. also is it better to record in a treated room or just use a portable vocal booth? tbh im not sure whats more important rn

Why does my Garmin 245 mess up my pour-over timing? Coffee tastes like mud

So I bought a Garmin 245 to track my kayak casting practice and it’s garbage at measuring pace during the stop-start motion. Now I’m trying to use it to time my pour-over coffee and it’s throwing off my brew time by 10 seconds every single time. I’ve got a Hario V60 and a $120 grinder dialed in to 18g yield, but the inconsistent timing makes it feel like I’m guessing. Anyone else use fitness trackers for coffee timing? What even is the point of these things if they can’t handle something as simple as a 2:30 brew cycle? I’m over here with a lukewarm cup that’s either bitter or weak depending on the day.

overrated cooking technique

I've been thinking, and I'm starting to believe that basting meat while it's cooking is not all it's cracked up to be. I mean, I've tried it with roast chicken and beef, and honestly, I don't notice a huge difference in flavor or moisture. Maybe I'm just doing it wrong, but it seems like a lot of extra work for minimal payoff. Has anyone else had a similar experience?

Finally get complementizers right after typo rant??

Been chewing over that textbook typo on complementizers like a stale loaf. Tweaked the grammar file, cleaned up the clause rule, and now it parses the sentences correctly. The wrong tree index had been feeding bad output for weeks. A quick pass over the test corpus shows clean completions this time. Down a bit but ready to tackle those disjunctive structures. Anyone else cracked it??

Burnt my first attempt at sous vide steak... and some thoughts on food prices

I just had to share my latest kitchen fail. I've been eyeing those fancy sous vide machines for a while now, and I finally decided to give it a shot. I mean, how hard could it be, right? I set it up, placed the steak inside, and waited... but somehow I managed to mess up the timing and ended up with a piece of leather. Not exactly the tender, pink delight I was hoping for. As I was sitting there, staring at the burnt offering, I started thinking about the state of food prices lately. Have you guys noticed how much it's costing to eat out or even just buy decent ingredients these days? It's like the economy is playing a cruel joke on us. I swear, I remember when a decent steak used to be affordable. Now it's like they're charging us per Instagram-worthy plate. Anyone else feeling the pinch? What are your favorite cost-effective cooking methods? Share your tips, and maybe we can all learn to cook like pros without breaking the bank...

help with applying culinary origami techniques to molecular gastronomy

so ive been experimenting with incorporating origami techniques into my molecular gastronomy dishes and im hitting a wall rn. anyone have experience with applying the principles of kirigami to spherification or foamification? specifically im trying to create these intricate folded designs on the surface of a sphereified liquid nitrogen ice cream but its not holding its shape tbh i've tried using a combo of sodium alginate and xanthan gum but it just ends up collapsing on itself any tips or resources would be greatly appreciated imo its a game changer for presentation

Do you always prep every ingredient before starting to cook?

I've been cooking for a while now, and I've gotten into the habit of prepping every single ingredient before I even think about turning on the stove. I mean, we're talking chopping every vegetable, measuring out spices, marinating meats - the whole nine yards. It's become second nature to me, but I've started to wonder if this is just an unnecessary step. I've seen some chefs on TV just kind of winging it, tossing in ingredients as they go along. Is that really how most people cook, or am I just being overly cautious? I feel like it saves me time in the long run, but at the same time, it can be a real pain to spend 20 minutes chopping onions and garlic before I've even started cooking. Do any of you have a different approach, or am I just being paranoid about kitchen chaos?

How to break my habit of over‑salting dishes and other stubborn kitchen sins?

I'm sick of turning every decent recipe into a salty mess because I can't stop sprinkling salt like it's confetti. Same with other ingrained crap: using a blunt chef's knife until the food looks like mush, crowding the pan so everything steams instead of sears, and never letting a piece of meat rest because "I need it now".

What concrete steps actually work to unlearn these habits? I need a routine or a mental trigger that actually forces me to pause and think, not just another vague "taste as you go" cliché. Anyone got a proven checklist or a technique that has actually stopped you from falling into these patterns? I’m willing to try weird hacks if they stop the constant kitchen facepalm.

Also, how do you keep yourself from constantly cleaning as you go – that’s a habit I’ve built to "save time" but it just slows everything down and makes me forget the next step. Advice, tips, proven fixes, or at least a rant about how ridiculous these habits are would be appreciated.
